Put the peaches in boiled water for 1 minute. Remove and peel.

The sugar is caramelized and poured into a pot, greased with butter. Cut the peaches into slices and place over the caramel. I had a tray 27 cm in diameter.

Dough: All ingredients should be at room temperature. Mix butter with sugar, vanilla sugar, then one egg at a time. Mix flour with baking powder and salt and put over the composition of butter and eggs, alternating with milk.

Pour the dough over the peaches in the pan, level and bake in the preheated oven at 170 degrees Celsius, for 45 minutes. After baking, leave for 5 minutes. Pass with a knife on the edge of the tray, peel it and put a plate (larger than the tray) on top of it and it overturns.

Preparation & # 8211 Overturned cake with caramelized apples:

1. First we take care of the apples, peel them and cut them into suitable pieces, approximately equal. You can also use sliced apples, not necessarily cut into pieces.

2. In a saucepan put the sugar to caramelize, stirring quite often.

3. When the sugar has melted (be very careful not to burn it, because it will have a bitter taste), add the butter.

4. After the butter has melted, add the apples and let them boil in the syrup formed until the apples are soft. When they are ready, turn off the heat and let them cool until we take care of the pandispan.

5. Beat the egg whites, then add the sugar gradually, the vanilla sugar and mix until the egg whites become a hard foam.

6. Add the yolks one by one and mix until the ingredients are well blended, then add the oil.

7. At the end, gradually add the flour together with the baking powder and incorporate it with the help of a silicone spatula, by wide movements from bottom to top.

8. Add the pandispan dough over the caramelized apples.

9. Put the pan in the preheated oven for about 20 minutes. When the top is ready, take the pan out of the oven and immediately turn it over on a plate (if it cools, the caramel will harden and will not come off the pan). We can cut the cake into slices of cake or into squares. It can be served with ice cream or whipped cream.

Drain the peaches but keep 2 tablespoons of syrup, and dry with a clean kitchen towel.
In a small bowl mix the brown sugar, 1 tablespoon of melted butter, cinnamon, nutmeg and the two tablespoons of syrup kept.

Pour the above mixture into a cake form (preferably with detachable walls) followed by sliced peaches, arranged according to preference, in a single row.

In a large bowl, mix the dry ingredients (flour, sugar, baking powder, baking soda and salt).
the "wet" ingredients (sana, egg, vanilla and melted butter) are mixed in another bowl and then added over flour, baking powder, etc.

Pour the mixture obtained over the peaches and put it in the preheated oven at 350 F (180C) for 30-35 minutes (prick it with a toothpick and if it comes out clean, it's ready).

It is left approx. 10 min. cool it and then turn it over on a plate (the peaches must be on top).

I like to serve it with a "mot" whipped on top.

The recipe for the overturned cake with peaches was proposed by Marci on the culinary forum.
