  • 12-24 freshly shucked oysters
  • ½ cup white wine
  • 1 cups chopped shallots
  • ½ cup chopped garlic
  • 1 sprig thyme
  • Salt and pepper
  • 2 small bottles of Tabasco sauce
  • 1½ pounds butter
  • ½ cup parsley, finely chopped


In a small saucepan over medium heat, reduce the white wine with shallots, garlic, and thyme. Season with salt and pepper. Add the Tabasco, turn up the heat to high, and bring to a boil.

Once the liquid boils, turn down the heat to low. Add the butter, ½ pound at a time, whisking constantly to ensure that the emulsion doesn’t separate. Finish with parsley.

Cool pan in an ice bath promptly, stirring once in a while. To plate, place 1 tablespoon of the sauce on top of each oyster, place under a broiler and heat until golden. Serve immediately.

Sauce can be made days in advance.

  • 1 red Fresno chile, seeds removed, finely chopped
  • 4 ounces finely grated pecorino Romano cheese (1 cup), divided
  • 24 medium oysters in the shell
  • Hot sauce (such as Texas Pete)
  • Saltines

Heat grill to high (450°F to 550°F). Stir together butter, parsley, tarragon, jalapeño, Fresno chile, and ¼ cup of the pecorino Romano in a bowl until thoroughly combined. Let stand at room temperature.

Scrub oysters with a stiff brush under running water. Insert an oyster knife into the hinged edge of each oyster twist knife handle back and forth until top shell is loose. Slide oyster knife along the bottom of the top shell to detach muscle. Remove and discard top shell, keeping the oyster in the deeper bottom shell.

Place oysters on a rimmed baking sheet. Top each with about ½ tablespoon butter mixture. Transfer oysters directly to grill rack. Grill, covered, until oyster juices are bubbling and butter has melted, about 5 minutes. Top with remaining ¾ cup pecorino Romano, and grill, covered, until cheese has melted, about 1 minute. Remove from grill. Serve with hot sauce and saltines.

  • About 2 tablespoons (1 oz) butter, at room temperature
  • 8 relatively thick slices sourdough or pain au levain bread
  • 4 ounces fromage blanc
  • 4 ounces Gruyère cheese, coarsely grated (you could swap Comté or Swiss)
  • 4 ounces Cheddar cheese, coarsely grated (up to you how sharp a Cheddar)
  • 4 ounces Havarti cheese, coarsely grated


Butter one side of each slice of bread, using all of the butter. Place 4 of the slices, buttered side down, on a parchment-lined counter or a cutting board.

Spread 1/4 of the fromage blanc on the plain side of each of those 4 slices, then top each with 1/4 of the Gruyère, 1/4 of the Cheddar, and 1/4 of the Havarti. You may need to use your hand to squash the cheese a little to keep it from falling off the bread. Top each teetering tower of cheese with one of the remaining bread slices, buttered side up.

Heat a large skillet over medium heat for 2 minutes. Place 1 or 2 sandwiches in the pan, cover, and cook for 3 to 5 minutes, until the undersides are golden brown. Turn the sandwiches and press each one firmly with a spatula to flatten it slightly. Cover and cook for 3 to 4 minutes, until the undersides are well browned. Remove the lid, turn the sandwiches once more, and press firmly with the spatula once again. Cook for 1 minute, or until the cheese has melted completely into a quagmire of gooeyness.

Remove from the pan and let cool for 5 minutes while you repeat with the remaining sandwiches. Cut each in—either on the diagonal or right down the center—and serve immediately. With plenty of napkins. Originally published April 11, 2011.

Want to give your grilled cheese a college education? Try this recipe. We really liked the flavors of the cheeses I chose (a good Swiss, sharp cheddar, and Havarti) on the sourdough bread. I omitted the fromage blanc because I couldn’t find it in our local market.

I’ve never grilled a sandwich with the cover on the pan, but I was pleased to find that the bread didn’t become soggy. Flattening the Hog Island grilled cheese with a spatula is the way my mom always made grilled cheese for us, so I was thrilled to see the technique used in this recipe.

Sometimes, all you need in life is a good grilled cheese sandwich—and this one is it. My favorite part of the recipe is the direction to let it sit before serving. It was the first time I didn’t burn my mouth because I was so excited to eat.

The nonstick pan is very important. I made the sandwich again in my favorite skillet, and it just wasn’t the same. The bread stuck to it, and the cheese oozing out didn’t develop into a golden crisp. Also, the built-up steam from covering the skillet helps melt the cheese nicely. One word of warning, though: my husband complained of palate fatigue about three-quarters of the way through his sandwich. Adding in a sweeter or creamier cheese, or maybe a less tangy bread may be the solution.

I couldn’t have tested this recipe on a better night—at the end of a particularly busy workweek, after a long drive (crawl) home in several inches of snow. Armed with a digital scale and a timer, in no time a perfect, hot meal was ready. This sandwich still has the familiar gooey doneness of the classic, but with a higher level of gratification. The Hog Island Grilled Cheese is warm and oozy inside, but golden brown and crusty on the outside. Take it to your couch, put your feet up, and eat it with your hands while watching TV.

My husband and I live in San Francisco and share a birthday week, so every year, we go all-out at Hog Island Oysters, ordering their oysters, salad, soup, and grilled cheese. The first bites evoked big smiles from all of us. The cheese blend paired with the hearty bread make it a unique grilled cheese, one that’s sure to be a crowd-pleaser. I’d definitely recommend this to anyone who loves cheese. And if you’re lucky enough to live in or visit San Francisco, make sure you head over to the Ferry Building to check out the real thing.

This sandwich is awesome, as long as you keep the heat on low and watch carefully for burning. I used a loaf of pain au levain, and needed a bit more butter to coat each slice of bread than what the recipe called for. The recipe also calls for a lot of cheese, so you definitely have to pat it down so it sticks together.

This is a delicious sandwich. It’s no wonder that people line up to buy it. Highly recommended!

I used equal amounts of cheddar, Gruyère, and a mild provolone, and I found that grating the cheeses allowed them to melt perfectly. I also was fortunate to have a freshly baked loaf of country bread. Covering the sandwich for a part of the cooking time facilitated the melting of the cheeses, and by turning the sandwich over a couple of times, the bread remained crisp.

You do need to watch the heat and progress of the browning, however, especially while the sandwich is covered—for each turn, I needed a minute or two less than what was specified in the recipe. Overall, this sandwich is worth the time it takes to prep.

I love the simplicity of this recipe. It’s perfect for an evening in which you don’t have much time to prepare dinner for the family. Both my husband I liked that it was smooth, creamy, and filling. Covering the sandwiches while cooking didn’t make the bread soggy whatsoever.

If you want a serious grilled cheese, this is it, as this recipe definitely doesn’t skimp on the cheese. The fresh sourdough worked really well, as you need a hearty piece of bread to hold all the cheese.

I sliced my bread a little thicker than 1/4-inch. I used a cast-iron skillet, which gave the sandwich a nice crispy crust, even when covered with a lid. I served this dish with sliced tomatoes and edamame drizzled with oil and balsamic vinegar. If you didn’t want to eat this as a whole meal, you could cut the sandwich into finger-sized slices, and maybe top it with a tomato puree. Overall, this recipe was so easy to make. If you have a kitchen scale, use it to measure the amount of cheese per sandwich.

It was worth the extra effort to grate the different cheeses! I also used the St. George cheese, replicating the sandwich made at the Hog Island Oyster Bar, but if that’s not available, the Gruyère, Cheddar, and havarti combination works well.

This is the kind of fat and heavy food we don’t eat much of at home anymore—we even gave away our toaster to avoid temptation. But on a rainy cold night, I prepared this for the family, serving it with a large mixed salad (to clean my conscience). We all liked it too much.

I used Cheddar, Gruyère, and Bulgarian Kashkaval cheese between slices of sourdough rye bread with caraway seeds. The bread slices were about 1 centimeter thick, which was too thin for this kind of cooking and this amount of cheese, so next time we’ll try it with thicker slices.

I have had the experience of this transforming sandwich at Hog Island in the Ferry Building. We laughed when my daughter-in-law (not a seafood fan) ordered it years ago the first time. We thought: who comes to an Oyster/Seafood restaurant and orders grilled cheese? Then we all had a bite…I really mean transformative nothing will ever come close. The problem with this recipe is unless you live in SF, you can’t get Acme Bread or Cowgirl Creamery cheese. Luckily, a local bread bakery will have just the perfect bread and I love searching for cheese!

  • ½ cup rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon finely diced shallot
  • 2 teaspoons seeded and finely diced jalapeño, or to taste
  • 1 teaspoon sugar
  • 3 tablespoons finely chopped fresh cilantro
  • 24 small-to-medium oysters

To prepare sauce: Stir vinegar, lime juice, shallot, jalapeno and sugar in a bowl until the sugar dissolves. Cover and refrigerate for at least 1 hour before serving. Stir in cilantro just before serving.

To shuck oysters: Before you begin, be sure you have an oyster knife do not try to shuck oysters with a regular kitchen knife. Rinse oysters under cold running water. Throw away any that are open and don't close if you tap them.

Place an oyster flat-side up on a work surface. Grip the oyster with a kitchen towel to help protect your hand (or wear a glove), leaving the narrow hinged end exposed.

Place the tip of the knife between the top and bottom shells just adjacent to the hinge. Press inward, twisting and wiggling your knife tip, to release the top shell. At first, it may seem like you aren't making progress, but continue with gentle pressure. Continue wiggling the knife while pressing inward until the shell pops open. Try to keep the oyster level so the flavorful "liquor" (briny, salty seawater) stays inside the deep bottom shell.

Wipe your knife to remove any debris, then pry open the shell by inserting the knife tip in one or two other spots, twisting it to release the shell completely. Continuing to hold the oyster level, run your knife along the inside of the upper shell to cut the muscle that attaches the oyster to the top shell. Run your knife along the inside of the lower shell and gently cut the oyster free. Leave the oyster nestled in the shell. (If you open an oyster that has a strong, sulfurous smell, discard it. It's dead.)

Transfer the oyster in its bottom shell to a bed of crushed ice, rock salt or crumpled foil that will keep the oyster level. Serve immediately with about 1/4 teaspoon "Hog Wash" sauce per oyster.

Make Ahead Tip: Cover and refrigerate the sauce (Step 1) for up to 3 days stir in cilantro just before serving.

Why this chef is turning mushrooms into ‘bacon’ and tofu into ‘blue cheese’

To some chefs, “vegan” is a dirty word, representing an expletive-punctuated scramble in the kitchen to pull together a vegetable plate for a diner who eschews meat, eggs and dairy. Todd Gray, however, sees things a little differently.

As chef-owner of Equinox, just a stone’s throw from the White House, Gray — who is neither vegan nor vegetarian — has found the process of creating fine-dining vegan dishes (a rarity in Washington) to be a challenge and a delight. “There’s a tremendous world of great vegetables,” enthuses Gray. “I love my local soft-shell crabs, beef, pork and duck, but, once you get past those four items, there are actually 60 vegetables on our menu right now.”

As the vegan options at Equinox have grown over the past decade or more to include a brunch, originally served on Sundays at the now-defunct Corcoran Gallery of Art, and a tasting menu complete with wine pairings, Gray got itchy to play around with some other ideas, leading to this year’s Vegan Smackdown Challenge. If you never thought you’d hear the word “smackdown” associated with a white-linen-tablecloth restaurant, then you probably also never thought you’d eat an edible “oyster” shell. “If anyone had told me 10 years ago that I’d be flirting with making dashi with local mushrooms,” says Gray, “I would’ve said, ‘You’re out of your freaking mind.’ But that’s the evolution, and it’s exciting for me.”

The concept of the smackdown is simple: Unlike most such challenges, it’s really an exhibition, not a competition. Gray asked several prominent chefs, including José Andrés, Todd English and Carla Hall, to give him a meat-based recipe of theirs that he could convert into a vegan version, featuring one on the Equinox menu each month. The smackdown began in April with Spike Mendelsohn’s Prez Obama Burger, the most popular burger at his Good Stuff Eatery restaurants, which Mendelsohn says he thought would be a “fun challenge” for Gray. The original is laden with applewood bacon, Roquefort cheese and horseradish mayo, but Gray took on the challenge with gusto, using leek ash to simulate veining in a tofu-based “blue cheese” and creating a smoky “bacon” out of oven-dried royal trumpet mushrooms for his quinoa-black bean patty, calling it, cheekily, the FLOTUS Burger.

Mendelsohn says he found the smackdown concept intriguing, particularly now that he’s cooking more vegan-friendly dishes for his vegetarian fiancée and exploring adding such plant-based options as a savory mushroom tartine to the menu at his meat-focused, Montreal-inspired bistro, Béarnaise. “I’ve stumbled on some really delicious flavors,” Mendelsohn says. “Todd’s vegan challenge is definitely another push of creative inspiration.”

That kind of response from other chefs is exactly the point of the challenge for Gray’s wife and Equinox co-owner, Ellen Kassoff, who has been the driver of the vegan experimentation at their restaurant since they opened 16 years ago. “Chefs, being at the top of the food chain,” says Kassoff, “can effect change. Conscientious living provides a balance for mass consumption.”

Describing her current diet as 80 percent vegan — “I like cream in my coffee, and I love oysters” — Kassoff became interested in plant-based cuisine after spending several years working as a sales rep for Sysco. She sold foie gras, ducks and geese to Washington-area restaurants, meeting the chef who would become her husband while on a sales call. However, one day, she says, “I had an eye-opener into the world of meat production, and the way things were raised really got to me. And I just said, ‘That’s it.’ ”

Kassoff’s move toward part-time veganism was not a turnoff for Gray, trained in classical French and Italian cooking, where proteins are often considered more of a condiment than a centerpiece. And he was already well versed in seasonal cooking after working in his early career with chefs Roberto Donna and Jean-Louis Palladin. While Gray began seriously playing with vegan dishes as early as 2002, he and Kassoff had a sense that a plant-based diet was, as she puts it, “something for smelly hippies . . . and we did go to a lot of Grateful Dead concerts.”

When in 2011 they opened Todd Gray’s Muse at the Corcoran, Kassoff saw a chance to experiment: “I always wanted to have my own little hippy-dippy vegan cafe, so Todd agreed we could try it — once a month.” They decided to offer a completely vegan brunch, advertising only by word of mouth, and it filled up completely the first time. By the third month, there was a waiting list to get in, and demand was so high that they decided to have it every Sunday rather than once a month. “We had no proper kitchen,” remembers Gray, “just a panini press and two induction burners. It was like someone had opened the floodgates.”

For Kassoff, it was a chance to connect with other people who were “vegan-curious.”

“The stories of who these diners were was fascinating,” she says. “We spent a lot of time just talking to people and finding out why they were there. Some people were actually vegetarian or vegan, but others were their non-vegan spouses or people who were health- or environmentally conscious and wanted to try it out.”

Through those conversations, Gray began to notice something. “The vegans were a little wistful for something of their own, and their friends and families wanted to be able to participate in their veganism,” he said. The smackdown has become Gray’s response, a search to create a series of signature dishes for vegans, and the vegan-curious, and have a little fun at the same time with original dishes from his peers.

While diners in New York, Chicago, San Francisco and even Asheville, N.C., can sit down to first-class vegan and vegetarian meals in some of the country’s best restaurants, Washington has so far lagged behind in dedicated plant-based fine dining, despite the fact that vegetable-centric cooking and eating generally have been on the rise. Equinox is picking up the slack, recently impressing Washington Post food critic Tom Sietsema with what he called “a meatless meal with pomp . . . spreading the message that you don’t need fish, fowl or flesh to draw people to the table.” In fact, Sietsema gave Equinox 2 1 /2 stars in his Spring Dining Guide for just that reason it was a 1 1 /2 -star increase from its previous rating.

For the smackdown, chef Jamie Leeds of Hank’s Oyster Bar dared Gray to rethink her Hog Island Style BBQ’d Oysters, a delectation of broiled oysters in a spicy beurre blanc sauce. “I was interested to see how this particular recipe could become vegan,” she says. Undaunted, Gray started by thinking about the oyster shell itself, creating an edible vessel from a deep-fried round of nori, then considering the combination of ingredients that would nestle into that shell to provide just the right bite for his version: BBQ’d Oyster Mushrooms “Roosevelt Island” Style.

“I’m not trying to emulate the flavor of the oyster,” he says, “but there are elements you want.” He naturally gravitated to salsify, a little-known vegetable also called “oyster root,” as the first flavor element he placed inside the nori shell. “It has that little bit of oyster sweetness, so it was perfect for this dish,” notes Gray. He then added grilled oyster mushrooms — “It seemed like the obvious choice” — but later revised the recipe to use maitakes, which he thought had a better overall texture.

It’s clear that Gray is having fun in the kitchen, thinking through textures and flavors down to the tiniest detail: “For instance, I thought about that burst of juice that you get when you bite into an oyster, and I knew I had to come up with that experience.” His solution? A few drops of fresh cucumber-melon juice strategically placed on the grilled mushrooms, which are then topped with a spicy cashew cream sauce and, finally, tiny leaves of red-veined sorrel for a lemony note of freshness. “This dish is probably the quintessential example of where I want to take my vegan cooking,” says Gray.

In the coming months, the Vegan Smackdown Challenge will continue as Gray tackles a cheesy frittata recipe from Cat Cora Mary Sue Milliken’s cochinita pibil, a slow-roasted pork dish from the Yucatán Peninsula and a chicken and mushroom paella by José Andrés, among others. “Taking other chef’s ideas is challenging,” says Gray. “Our goal is not to replicate the taste of meat that’s not the point. It’s about arriving at a creative destination that you didn’t even think you could get to.”

Another round of star-studded recipes with Roy and Jon

All too often, Hollywood “passion projects” tend to be underwhelming excursions from A-Listers who want to show off some esoteric interest — but that’s not the case with The Chef Show, a new cooking series starring writer/actor/filmmaker Jon Favreau and chef/author/TV host Roy Choi. In every cooking scene, it’s clear that these famous friends love working together in the kitchen and take delight in demystifying the finer points of restaurant cookery for the rest of us. The second half of Season 1 — out today on Netflix — is just as entertaining and informative as the first round of episodes, with a few surprises thrown into the mix.

While much of the first half of the series was devoted to recipe segments filmed in spacious, well-lit kitchens, the second half of Season 1 shows Roy and Jon going on a few excursions in Northern California. The fourth episode begins with the hosts clad in life preservers, gliding across the beautifully gray Tomales Bay on a motorboat en route to the Hog Island Oyster farm. After pulling the oyster cages from the water and whacking them with bats to loosen the shells, Roy and Jon head to Hog Island HQ in the tiny coastal town of Marshall, for a beachside feast of mussels in white wine sauce and barbecued oysters.

Unlike most travel sequences on food shows, there’s no explanation for why they’re going on this oyster adventure — and there doesn’t need to be either. The Chef Show, in its best moments, is all about Roy and Jon exploring their culinary curiosities, and in this episode, they simply decided to go all-in on oysters.

In the next episode, the hosts find themselves in another unusual locale: the sprawling Skywalker Ranch in Marin, California, where special effects for the Stars Wars movies and other big deal Hollywood projects are alchemized. Roy and Jon pluck vegetables and herbs from the garden with the help of farmer Lyn DeLlamas, and then go into the Victorian-style mansion’s kitchen with chef Mindy Schreil to prepare a farm-to-table feast that includes bacon-wrapped wagyu filets from cattle raised and butchered on the ranch. Who knew that some of Hollywood’s biggest movies were made inside a locavore utopia, 25 miles north of San Francisco? I did not.

In terms of star power, Volume 2 bats a bit lower than the first round — although the first episode does include a highly amusing fried and braised chicken tutorial featuring a perpetually chortling Seth Rogen. Two episodes are devoted to recipes from acclaimed chefs who many viewers outside the LA area might be unfamiliar with: Guerilla Tacos mastermind Wes Avila and Pizzana chef/owner Daniele Uditi. And the season concludes with scenes featuring Momofuku boss David Chang and vlogger Andrew Rea that appear to be leftovers from the first half of the season, but are entertaining nonetheless.

Midway through the third episode, I was reminded of my one main issue with this series from the first go-round: There are hardly any women in the The Chef Show. In the latter half of the season, Roy and Jon cook with two talented female chefs — Schreil and Hog Island’s Mariko Wilkinson — but considering how much the stars and their guests refer to cherished childhood memories of the mothers and grandmas who inspired their love of food, it seems especially odd that the show is almost exclusively a bro-down. My hope is that A) The Chef Show gets a second proper season. And that B) Roy and Jon take a note from their Netflix colleague Samin Nosrat and put more female chefs on camera — both as kitchen professionals and the women who inspired their mutual love of cooking.

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup minced shallots
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped celery
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon Worcestershire sauce
  • Large pinch of cayenne pepper
  • Rock salt
  • 2 dozen small (3 to 4 inches long) Pacific oysters on the half shell
  • Minced fresh flat-leaf parsley, for garnish

Preheat oven to 400 degrees. In a small skillet, cook bacon until almost crisp. Using a slotted spoon, transfer to a paper towel-lined plate set aside.

Place the butter, shallots, bell pepper, celery, lemon juice, Worcestershire sauce, and cayenne pepper in a food processor mix until well combined, about 20 seconds.

Spread 1/4 inch rock salt on a rimmed baking sheet and bake for 8 minutes.

Place oysters firmly in the hot rock salt. Place 1 tablespoon of the butter mixture on each oyster top each with bacon. Bake oysters until bubbly, about 12 minutes. Do not overcook. Sprinkle with parsley and serve immediately.

Recipe Summary

  • ½ cup (4 oz.) salted butter, softened
  • ¼ cup chopped fresh flat-leaf parsley
  • ¼ cup chopped fresh tarragon
  • 1 jalapeño chile, seeds removed, finely chopped
  • 1 red Fresno chile, seeds removed, finely chopped
  • 4 ounces finely grated pecorino Romano cheese (1 cup), divided
  • 24 medium oysters in the shell
  • Hot sauce (such as Texas Pete)
  • Saltines

Heat grill to high (450°F to 550°F). Stir together butter, parsley, tarragon, jalapeño, Fresno chile, and 1/4 cup of the pecorino Romano in a bowl until thoroughly combined. Let stand at room temperature.

Scrub oysters with a stiff brush under running water. Insert an oyster knife into the hinged edge of each oyster twist knife handle back and forth until top shell is loose. Slide oyster knife along the bottom of the top shell to detach muscle. Remove and discard top shell, keeping the oyster in the deeper bottom shell.

Place oysters on a rimmed baking sheet. Top each with about 1/2 tablespoon butter mixture. Transfer oysters directly to grill rack. Grill, covered, until oyster juices are bubbling and butter has melted, about 5 minutes. Top with remaining 3/4 cup pecorino Romano, and grill, covered, until cheese has melted, about 1 minute. Remove from grill. Serve with hot sauce and saltines.

Oahu Eateries Memorialized

Th e recent closing of Byron’s Drive-In — a 24-hour institution in the Honolulu International Airport area — ends the final chapter in a long history of the late Andrew Wong’s restaurant empire on Oahu.

Which makes this a good time to look back in time and reflect upon all the wonderful restaurants we grew up with here in Hawaii on the island of Oahu that are no longer around.

Here’s a master list of Oahu eateries that have since closed their doors, collected from numerous online discussion boards, an old Polk Directory, Bob Sigall’s fantastic The Companies We Keep, as well as references from personal family, friends and coworkers. Links go to websites (or posts on this blog) with useful information pertaining to that particular business.

There’s certainly many businesses missing in the list at this point (3.23.13), as this is a perpetually dynamic work in progress like Wikipedia, intended to be completed via contribution from you folks, the readers!

  • Aarons atop the Ala Moana – Ala Moana Rennaisance Hotel penthouse / scenic views of Honolulu and Ala Moana Beach, upscale pacific rim cuisine. Aaron’s immediately followed Nickolas Nicholas, which was in operation there from 1986 to 1985.   • Aiea Diner (likely not the proper name, so if you know this place, please help to update it!) – Kamehameha Hwy., top of the hill, on the southwest corner, right at the turnoff down to Aiea there was only one road at the time (1960s) into Aiea and it was Kaamilo, which now dead-ends into a suburb / During the 1960s era (󈨆 to 󈨇 in memory), it was a great old-fashioned 1950’s style diner with pictures of Hawaiian singers of the day on the walls. *contributed by Rob Cannon
  • Aiea Drive-In – On Moanalua Road, where the Aiea Shopping Center is now / *Masaji Uyehara opened Aiea Drive-In in 1951. It was closed around 1953 because a woman drove her car right into the restaurant and caused the building to burn down. The insurance was not enough to cover the damages so Mr. Uyehara quit the business to focus on the Ilima Drive In on King St. and the Mapunapuna catering.   • Alioto’s – 1580 makaloa st, 12th floor penthouse / In operation from 1977-80, this was the Honolulu branch of the famous SF seafood restaurant.   • Aloha Grill – corner of Bethel Street and Chaplain Lane (across from Mark’s garage) which had a bowling alley in the basement / Late 50s/early 60s era *contributed by A. Keomaka – Dole Cannery, Iwilei / Aloha Tofu factory outlet store opened January 2015 in 5,000 square feet of space that included a deli, retail logo shop and full service kitchen with large commercial deep fryers to make their yakidofu and aburage products. Brock then broke the deal and contracted another aninatronics company to come up with their own pizza theater show (Showbiz Pizza). CEC sued and won a big settlement, but then went bankrupt a and was bought out by Showbiz. Then Showbiz pushed out their original animatronics company, but apparently forgot that they owned the rights to the shows, at which point they rebranded under the Chuck E Cheese name.   • Columbia Inn – Kapiolani Blvd., next to the Honolulu Advertiser building. also Waialae Ave., Kaimuki, in the shopping center with Times and Longs also Pearl City, on Kaahumanu St., just mauka of Kamehameha Hwy./ Historical facts from “The Oroku, Okinawa Connection UH Center for Oral History”: Opened December 20, 1941 by Gentaro & Toshi (Fred) Kaneshiro on Beretania Street at Tin Can Alley (Maunakea St). Popular restaurant and bar for military and government workers during WWII. In 1964 because of Chinatown redevelopment Columbia Inn relocated to Kapiolani Blvd. (Times Grill opened by Wallace & Albert Teruya in 1939). The Waimalu Columbia Inn was opened in July 1981 (on the same day Toshi passed away) to expand the business. Both the Kapiolani and Waimalu restaurants were sold in 1984/1986 to the Japanese corporation, Kyotaru. As part of the sale, the family stayed on at Kapiolani up to the time the restaurant was closed by Kyotaru in 2001. In 2001, the Nguyen brothers bought the Kaimuki Columbia Inn. They leased the restaurant’s name from Alan Casupang, who bought the franchise rights from his former employer, Kyotaru Hawaii, which had owned the Kyotaru and Columbia Inn restaurants in Hawai’i since 1986. Columbia Inn Top of the Boulevard became famous for its award winning “broke-da-mouth” stew. The Kapiolani location was a popular eating and drinking spot for locals and celebrities, as well as journalists from the Honolulu Advertiser next door.   • Don B’s Waterways Restaurant – Hawaii Kai on Kuapa Pond / Don Buechner ( famed General Manager from John Dominis ) and his wife Eileen Locsin and her family bought the restaurant from Dolly Parton’s ailing business in 1988. It was fine dining downstairs and casual upstairs in the bar and beautifully renovated with the best views ( before Costco was built) . It had gorgeous interiors and 2 floors of wrap around lanais with water views and a 100 foot boat dock. In fact Eileen started the very first Boat Parade from Don B’s boat dock. The food was delicious with the best fresh Ahi Sandwich with San Francisco’s imported sourdough bread and the hamburgers upstairs were famous also. Everything was fresh imported imported crab and lobsters served in the fine dining portion of the restaurant downstairs and the fabulous wasabi garlic mashed potatoes! Live music on all weekends and holidays. The Desert Storm conflict and the 3 year project on Kalanianaole Hwy and bad economy terribly hurt Don B’s. They were forced to close in 1991. Don Buechner moved on to the Mauna Lani Hotel and was GM at the fine dining Canoehouse Restaurant on the Big Island.   • Emilio’s Pizza Restaurant – 1423 Kalakaua Ave (corner of King St.) / Roberto and Brian worked there as family friends. Brian was 11-12 years old and escorted people to the remote bathroom. Dwayne Johnson, “The Rock” was a waiter for a while during the early 90s. Brian’s mom used to supply the fresh basil. If you ever had any dish with fresh basil, it was supplied from Brian’s mom’s garden at Makiki park. It’s a long story why they closed, avoiding greed could have stopped it. Roberto put a bunch of computers in the dining area trying to download every song on the internet and make bootlegs, neglecting the restaurant. Brian worked for Roberto when he needed help but he paid him below minimum wage, and sometimes not at all. All he had to do was pay me normal wages, or quadruple wages – ($15/hr in 2003) like he did for his family. The front area turned to a cockroach ridden, cigarette smelling bank of computers downloading pirate music 24/7. Jade Moon came in to eat and was disappointed, she was right. It was no longer the same as it was. In the end Roberto, who knew Brian since he was 4 and when Emilio’s was near Red Lobster on Ala Moana blvd. in the early 80’s acted like Brian did something to him by not working for below minimum wage in a restaurant half taken over by banks of cockroach infested, cigarette smelling computers downloading the entire database of The Pirate Bay, and blamed Brian for his restaurant closing.

  • Il Fresco – Ward Center / Owner and Chef Mike Nevin (he was later longtime chef at the Honolulu Museum of Art) created his own house-made pastas and dough, and wood-fired pizza oven that cranked out his Duck Sausage pizza. So ono. They had an appetizer called Grilled Eggplant with Chili Goat Cheese, which when duplicated (properly) at home, gets raves every time! The restaurant was the “offspring” of Mike and Mary Ann Nevin’s retail store, the Napa Valley Grocery Co., which was replaced with the original R. Field Wine Co. It was one of the first places you could get a variety of pate, terrines, cheeses, charcuterie, artisan breads and boutique wines in Hawaii.

As a Keeaumoku Street mainstay for over 60 years, it has become a Honolulu landmark, attracting local families and tourists alike, officially designated by the State of Hawaii as a place of historical interest. W&M Burger took over Wiki Wiki Burger in the late 1964, then after that, Shari’s took over the spot around the early 70s. Closed to the sale of the property by owners, the Harry & Janette Weinberg Foundation. The Willows was a very popular family restaurant, located in a hidden oasis within the sprawl of busy urban Honolulu. Featured open air dining and private function rooms, as well as a chapel. Fresh water pond filled with carp and waterfalls, as well as a Hawaiian canoe that had an additional private dining space. The AYCE buffet featured a wide variety of pacific rim and continental favorites, while being known for their Hawaiian food and desserts.

They are in their 60s and 70s now.
